The Ronald Reagan Building and International Trade Center is Washington DC's premier special events & conference facility located on historic Pennsylvania Avenue in the heart of Washington within walking distance from the White House, the US Capitol and Smithsonian Museums.
Currently Trade Center Management Associates is seeking two experienced Assistant Executive Stewards to manage all aspects of the steward operations.
The Assistant Executive Stewards will work along with the Executive Steward to coordinate and oversee all stewarding operations and provide support for the Culinary and Events departments. Ensures the cleanliness of all kitchen and pantry areas and other places used for dispatch and breakdown of food. Maintains inventory of china, glass and silver, ensuring that all equipment is clean and in proper working order. Schedules and directs staff fairly and consistently to accomplish department goals. Administers discipline when appropriate and consistent with TCMA's policies and procedures, following the direction of the Executive Steward.
Responsibilities include but are not limited to:
Equipment
Maintenance and care of all food and beverage equipment
Maintain a perpetual inventory of all food and beverage equipment
Ensure that equipment is cleaned properly for use
Establish/maintain par levels for all equipment
Revise and develop policies and procedures to minimize breakage and shrinkage and reinforce with training and progressive discipline
Logistics
Ensure that all food and equipment is dispatched to the appropriate place to facilitate food and beverage service as specified on banquet event orders
Schedule staff properly to provide necessary support for plate-ups, dispatch and breakdown stations, delivery of equipment for set-up, and proper breakdown and storage of equipment
Sanitation/Cleaning
Responsible for cleanliness and organization of all kitchen areas, pantries, dispatch areas, loading dock and employee locker room
Maintain three sets of up to date MSDA sheets for chemicals used in the Stewarding department and ensure that they are stored in the proper places
Ensure that dish machines are performing up to standards and that equipment is cleaned properly
Report and/or remedy any unsanitary conditions immediately
Personnel
Develop/implement/maintain/revise ongoing training programs for each position in the Stewarding department
Train staff on all machinery and chemicals used and track attendance
Ensure all stewarding employees have a complete set of uniforms and that they adhere to our uniform and grooming policies
Report all employee issues promptly to senior management and /or Human Resources
Hold employees accountable for job performance fairly and consistently
Communicate daily with Executive Steward, supervisors and line employees to obtain/provide current information regarding daily activities/functions and upcoming events
Administrative
Develop and train supervisors and assistant managers
Attend all food and beverage and company wide meetings, and other applicable meetings and training seminars
Complete and deliver annual appraisals and necessary action plans on a timely basis
Maintain a current Stewarding Department manual
Report any unsafe conditions immediately
Adhere to all TCMA policies and procedures
Execute emergency procedures in accordance with ITC standards
Comply with required safety regulations and procedures
Comply with ITC standards, policies and rules
Other duties as assigned
Qualifications:
Minimum of one year in supervisory stewarding position in a high volume/upscale food and beverage operation
Experience with Microsoft word, Excel and Outlook
Thorough knowledge and understanding of kitchen equipment use and operation
Ability to work flexible schedule to include overnight, weekends and holidays
Maintain a warm and friendly demeanor at all times
Must be able to effectively communicate both verbally and written, with all level of employees
Must be able to multitask and prioritize departmental functions to meet deadlines
Must be able to maintain confidentiality of information
Proven leadership abilities in high volume hotel or catering operation.
Education & Experience:
Three to five years experience as Executive Steward or Assistant Executive Steward or comparable
High School diploma required
Physical Requirements:
Ability to bend, stand, lift 50 pounds and push carts weighing up to 200 pounds
Long hours sometimes required
