Trade Center Management Associates (TCMA, A Drew Company), the exclusive manager of the Ronald Reagan Building and International Trade Center, is seeking a talented Pastry Chef to join its culinary team.
This position will lead the pastry department operation including the production of all baked and pastry items, kitchen sanitation and staff performance. Take the lead in menu development, recipe development and food preparation related to pastry and desserts. Responsible for the execution of the pastry departmental strategic plan. Work in other areas of the kitchen as needed.
Essential Functions • Lead the daily operation of the pastry department including the production of pastry and dessert items, other items as needed, and kitchen sanitation • Direct the activities and monitor performance of the pastry department culinary team. Recommend best practices and solutions to ensure effectiveness • Maintain departmental policies and procedures relative to an effective food service operation. Ensure that the kitchen staff performs according to HACCP, OSHA and sanitation guidelines • Ensure that all baked items and pastries are prepared and presented according to set standards at all times. Monitor items for taste, visual appeal, and established portions • Create new baked goods and pastry items to be presented to the Executive Chef • Partner with others on the kitchen management team to develop special menus, items and presentations. Create cost cards, recipe cards and photos and catalogues • Prepare confections such as special showpieces and sugar blown decorations • Assist the Executive Chef in the development and preparation of special request items • Execute cooking shows and educational programs when appropriate • Maintain and demonstrate strong knowledge of food and beverage trends within the hospitality industry • Perform other duties as assigned
Job Requirements • Must have the ability and techniques to create and teach pastry and dessert presentations • Have the ability to create contemporary, classic, and regional desserts, as well as buffet executions for up to 2000 guests • Strong interpersonal and communication skills • Licenses/Certifications: Food Handler's Certification required
